10 Things to do with Zucchini

You went to the market and bought a lot of zucchini because it looked amazing. You bring it home and say to yourself, "How am I ever going to eat all this before it goes bad?"


Welll, I'm here today to give you ten ways that you can eat all that zucchini! Zucchini can also be chopped/grated and frozen for later us. You can either package your chopped zucchini in meal-sized bags or flash freeze it on a cookie tray for easier use. Make sure you label it! It will last a long time in your freezer.

 

1. Zucchini Bread

Everyone loves zuchini bread, don't they? Take your zucchini bread a step further by adding spices, nuts, raisins, dried fruit, or chocolate chips in it. Have fun with the recipe. Do you like chocolate? You can make a chocolate zucchini cake. You are getting your chocolate with your vegetables. Enjoy!

 

2. Stir-fry

Stir fries are a fun way to eat zucchini and other vegetables. Start by heating up some butter or coconut oil in a pan. Dice up zucchini (use both yellow and green for visual attraction), onion, bell peppers, some jalepeno if you dare, and other vegetables that are lying in your fridge such as brocoli, asparagus, or cabbage. Slide all the vegetables in your pan and carefully mix. Sprinkle in some salt and black pepper. Once the vegetables are sufficiently softened add soy and sesame seeds. Mix for about 30 seconds before serving.

 

3. Egg dishes

Zucchini and eggs go hand in hand. Add some sliced or grated zucchini in your next scrambled eggs, quiche, or frittata. Try this yummy zucchini fritters recipe!

 

4. Zoodles

If you have a spiralizer or a julienne peeler, zoodles are a great way to go! You can saute them and eat them plain or turn them into a delicious taco zucchini noodles! Pad thai can also be made with spiralized zucchini.

 

5. Lasagna

You don't have to be vegetarian to enjoy a zucchini lasagna. The younger zucchinis are best for this recipe as they contain less water and seeds. Top it with some fresh basil!

 

6. Zucchini Boats

Zucchini boats are a fun way to enjoy zucchini. Chop you zucchini in half length-wise. Scoop out the seedy center and discard. Top with whatever you want! Tomatoes, sausage, ground meat, cheese (the more the better!), pepperoni, sweet peppers, and jalepenos are all great choices that you can use. Get creative! Season with garlic and salt. Bake at 350 degrees until it is tender. Top with cheese and slide back in the oven until it is melted.

 

7. Grill

Those of you who love to grill or smoke, throw some zucchini sliced lengthwise on the grill. Season with salt and garlic powder. Cook until softened.

 

8. Zucchini Chips

If you have a dehydrator or an oven that can go down to a really low temperature, this tip is for you! Zucchini chips are quite versatile. You can eat them as a snack (sprinkle them with salt and seasonings if you desire) or keep them plain. The plain ones will last longer and can also be used in cooking.

 

9. Pie!?!

I am sure pie is the last thing that you think about when wondering what to do with zucchini. Zapple pie (aka mock apple pie) is a wonderful way to use extra zucchini. The best zucchini for this recipe is the large baseball bat 2-foot long zucchini that came out of nowhere! Young zucchini tend to taste like vegetables. Make sure you use lots of spices! Enjoy!

 

10. Waffles

Add zucchini to your next waffles! They add moisture to the waffles and can be used to encourage picky eaters to enjoy their vegetables. Top with your favorite waffle toppings and enjoy!
